I found this recipe in a great little book that I checked out of our local library:
I love it because it is so sweet- perfect for afternoon sugar cravings.
(But no sugar!)
Everywhere I take it, I get requests for the recipe.
So....... here it is.... my version anyway!
Cashew Maple Bars/Balls
1 cup cashews
1/2 cup oats (not quick)
1/4 cup pure maple syrup
10 Medjool dates (pit removed and coarsely chopped)
Place all ingredients in food processor and process until soft dough forms.
Roll into balls (my preferred method) or press into an 8" square dish that has been greased with coconut oil.
Freeze. Best when eaten straight from freezer!
